Spreadsheets are not the point. Plenty of people who budget well have never opened one. What matters is that the numbers are written down somewhere you actually look, and a notebook does that job perfectly well.
The simplest paper method needs one page per month and four lines: money in, fixed costs out, savings out, and what is left. Write the first three at the start of the month. The fourth is your spending money, and the only number you need to track day to day.
Making a notebook work
Give each week its own short column and write the day's spending in it before bed. It takes under a minute. The value is not the arithmetic, it is that writing an amount down forces you to notice it, which quietly changes what you buy.
Keep one page at the back for anything annual: insurance, subscriptions, gifts. Check it on payday.
Paper struggles with only one thing, and that is arithmetic across many lines. Do that part here, once a month, then copy the totals into the notebook and carry on.
